I first ate Monster Cereal Bars at the County Fair when I was just a young boy. My grandpa used to take me to the fair every year where we would wander the grounds, looking at all of the show animals in their pens, stopping by the booths of new and exciting products in the showcase building, and, of course, eating all of that wonderful County Fair food!
And if you’re still reading this, I’m sure you’re just as annoyed as everyone else is whenever they visit a website to get a recipe and have to scroll through the person’s entire life story before you get to the recipe. Well, that’s too bad, because I have to write a long intro so I include plenty of SEO-friendly keywords so that Google Search (and now probably Google AI) will index my page appropriately and bring you here.
Anyway, here are my recipes for Monster Cereal Bars!



Count Chocula Cereal Bars
- 8 Cups Count Chocula Cereal (including the marshmallows)
- 6 Tablespoons butter
- 10oz mini marshmallows
- 8oz dark chocolate, roughly chopped
- 1 Teaspoon espresso powder
- 2 Tablespoons cocoa powder
- Vanilla extract, measured with your heart
- Pinch of salt (skip if using salted butter)
1. In a large pot, melt butter on medium heat
2. Once melted, turn down to medium low and add cocoa powder and espresso powder, stirring constantly so they don’t burn. Incorporate well.
3. Add marshmallows, stir until melted.
4. Add cereal and stir until coated
5. Add chocolate chunks, stir until chocolate begins to melt, but try to leave some large pieces intact.
6. Transfer contents to 9×13 pan. Spread evenly with spatula, glove coated in cooking spray, or plastic bag coated in spray. Be sure to press down cereal to remove any gaps between pieces.
7. Top with Halloween sprinkles, if desired
8. Let cool completely for best results
Optional: In a microwave-safe container, add 1/2 Cup of creamy peanut butter. Microwave for about 30 seconds until liquified. Pour peanut butter in once marshmallows have melted and combine (essentially step 3.5 above)

Franken Berry Cereal Bars
- 8 Cups Franken Berry Cereal (including the marshmallows)
- 6 Tablespoons butter
- 10oz mini marshmallows
- 1 Cup freeze dried strawberries
- 1/2 Cup creamy peanut butter
- Vanilla extract, measured with your heart
- Pinch of salt (skip if using salted butter)
1. Place freeze dried strawberries in a Ziploc bag. Use a rolling pin to crush the strawberries, but feel free to leave some larger chunks. Set aside.
2. In a large pot, melt butter on medium heat
3. While the butter is melting, place peanut butter in a microwave-safe container and heat for about 30 seconds until it liquifies. Set aside.
4. When butter has melted, add marshmallows, stir until melted.
5. Turn heat down to medium-low. Add vanilla extract, pinch of salt, strawberries, and peanut butter. Stir until well combined.
6. Add cereal and stir until coated
7. Transfer contents to 9×13 pan. Spread evenly with spatula, glove coated in cooking spray, or plastic bag coated in spray. Be sure to press down cereal to remove gaps between pieces.
8. Let cool completely for best results

Boo Berry Cereal Bars
- 8 Cups Boo Berry Cereal (including marshmallows)
- 6 Tablespoons butter
- 10oz mini marshmallows
- 2 Cups vanilla-flavored chips or bars (rough chopped), divided
- 1 Teaspoon coconut oil
- 1/4 Teaspoon lemon extract
- Pinch of salt (skip if using salted butter)
1. In a large pot, melt butter on medium heat
2. When butter has melted, add marshmallows, stir until melted.
3. Turn heat down to medium-low. Add pinch of salt and 1 Cup of vanilla-flavored chips/chunks. Stir until melted.
4. Add cereal and stir until coated
5. Transfer contents to 9×13 pan. Spread evenly with spatula, glove coated in cooking spray, or plastic bag coated in spray. Be sure to press down cereal to remove gaps between pieces.
6. Let cool completely.
7. In a microwave-safe container, melt remaining 1 Cup of vanilla chips/chunks and coconut oil. Microwave for about 30 seconds, stir, and continue to microwave in 15-second intervals until smooth.
8. Stir in lemon extract.
9. Drizzle over bars and allow to set
